You can make this salad well in advance, even the day before. Just bring it to room temperature before serving

The kitchen is my favourite place...
My husband goes to his boat. My kids go to cyberspace. My dog goes to his mat and my mad old Mum sweeps the floor endlessly. We all have a happy place and without any thumb sucking or blanket chewing I can find mine in the kitchen.
When things go a bit askew or there is serious paperwork to be avoided, I can be found reorganizing my pantry. I can stare at the space between my nose and the cans of beans on the shelf and come up with a cool recipe for chicken. It’s where my brain seems to work best. It's my office, my food filing cabinet, my inspiration and my place of gourmet creation.
I am a self-confessed food maniac and I would like to share a few of my recipes with you.

I’ve cooked up drama-free midweek meals and one-pot wonders for nights when you just can’t face a sink full of dishes. Crowd pleasing salads to share and simple sides that will turn an ordinary dish into a delicious triumph.
There are lots of soups and salads as mains….so there will be plenty of room for dessert! I have written two dessert chapters, one is heavenly and health conscious for our sensible selves and the other, unapologetically sinful and appropriately naughty.
For those of you who like a bit of a party, I have weekend food for entertaining and party tricks to leave them wanting more.
The one thing all these dishes have in common is they are delicious and colourful and have a deep respect for good produce and that little extra something that will make you want to go back for more.
